:high5: That's how I make my omelettes. Sometimes I throw some green or red pepper in there if I have it.

    Yes.. that too!

I'm making Greg and I a nice dinner tonight since he took me out last night..
On the menu, we have seafood crepes in a white wine dill sauce, fried rice, and steamed vegi's. Also will have some homemade baguette with olive oil and balsamic vinegar if it is done in time :)

I have a good recipe for sheppards pie that is low fat. :)

Has garlic, onion, tomato paste, beef broth, frozen veggies, red wine, oregano in the hamburger base.

Call me crazy but... wouldn't shepherds pie be low fat anyway? Depending on what kind of beef you use (ie:extra lean/lean/regular) but even then, the type of beef wouldn't even matter if you drained it well..

    I dunno. It's a weight watchers recipe.

Also doesn't use a bunch of butter in the mashed potatoes.

By the way, the chicken meatballs were awesome.

    Basically here it is:
    1 lb ground chicken
    2 tsp thyme
    1/2 tsp sage
    1/4 tsp celery salt
    1 green onion finely chopped
    1 tbsp parmesan cheese
    3 tbsp italian bread crumbs

Make into meat balls and in a large deep frying pan, fry in 1 tbsp olive oil until browned. Remove from pan.

Add to pan 1 chopped onion, 2 chopped cloves of garlic and cook until starting to be translucent. Add 2 cans of "Accents" petit cut diced tomatoes (original flavor), 2 tbsp balsamic vinegar, 1/2 cup chicken broth, 1 tsp basil, 1/4 tsp salt. Add the meatballs and cook uncovered until they're cooked through and the sauce starts to thicken.

    Serve over whole wheat pasta.
