Came across this recipe in one of my low fat cook books (and I modified it slightly to add more flavor), and it's really really good and easy to make. 1 lb ground chicken 2 tsp thyme 1/2 tsp sage 1/4 tsp celery salt 1 green onion finely chopped 2 tbsp grated parmesan cheese 4 tbsp italian bread crumbs (add more if you find the mixture is too moist to roll) Make into meat balls and in a large deep frying pan, fry in 1 tbsp olive oil until browned. Remove from pan. Sauce: 1 chopped onion 2 cloves of garlic, minced 2 cans, "Accents" stewed tomatoes (Petit Cut, 19oz cans) 2 tbsp balsamic vinegar 1/2 cup chicken broth 1 tsp basil 1/4 tsp salt Add to pan chopped onion and garlic and cook until starting to be translucent. Add canned tomatoes, vinegar, chicken broth, basil, and salt. Add the meatballs and cook uncovered until they're cooked through and the sauce starts to thicken. Serve over whole wheat pasta.
