Baking with bananas...

    Sooooo I have a lot of frozen bananas. I just can't seem to remember to eat them when I buy them... but I suppose the good thing is I love to bake with bananas.

    I make a mean banana bread cake, and delish chocolate chip banana muffins... but I'd rather not make something SUPER unhealthy... maybe just a little unhealthy.

    Anyone have a good bran banana muffin recipe or something?

    Ooooh, good thread. In for some yummy banana recipes! I have two super over-ripe bananas sitting on my counter that I need to bake something with.

    You can make muffins healthier by cutting the oil in half and bananas (or apple sauce) instead to make them moist :)

    That's what I do with my banana bread. The original recipe called for a cup of oil (!). I made it with 1/4 cup of oil, and 3/4 cup of apple sauce, and it was awesome. :) I also cut the sugar down to compensate for the sweetness in the apple sauce.

    My mom had this recipe for Chocolate Banana muffins that was really high in fibre etc and they are delish i will find out the recipe...

    oh and how much less sugar would you use? usually its like a cup of sugar, but if you're using 3/4 a cup of apple sauce, how much sugar would you still use?

    Here's the original recipe I got from all recipes. Makes three loaves.

    INGREDIENTS

    * 3 cups all-purpose flour
    * 1 cup sugar
    * 1 teaspoon salt
    * 1 teaspoon baking soda
    * 1 teaspoon ground cinnamon
    * 3 eggs
    * 1 cup vegetable oil
    * 1 cup brown sugar
    * 2 teaspoons vanilla extract
    * 1 (8 ounce) can crushed pineapple, drained
    * 2 1/4 cups mashed ripe bananas



    DIRECTIONS

    1. In a large bowl, combine the flour, white sugar, salt, baking soda and cinnamon. In another bowl, beat the eggs, oil, brown sugar and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans.
    2. Bake at 350 degrees F for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

    Here's my modified version:

    INGREDIENTS

    Eat them frozen. My cousin used to freeze bananas then dip them in chocolate and eat them.

    I'm not much of a baker, but I use frozen bananas when I make smoothies :happysad:

    I toss in some frozen mixed berries (PC brand is good, and fairly cheap)
    Frozen Bananas
    Vanilla Yogourt
    Little bit of milk
    Some honey
    And sometimes I throw in some wild blueberry juice

    i didnt even think of it that way :happysad:

    all of my bananas are probably too ripe to be used in smoothies. i throw them in the freezer once they go pretty brown

    Should I go relatively healthy banana bran muffins?

    Or pretty unhealthy but delicious banana chocolate chip muffins???

    well i decided to do some 1am baking after all

    i didnt really go by a recipe.. i roughly went by one online and incorporated some of the stuff posted here

    we'll see how they turn out :eek3:
